Ingredients
1 medium Christmas pudding, cooked
Port or brandy
400ml double cream
3 oranges
1 lemon
50g chopped pistachios
Method
Mash up the Christmas pudding thoroughly. Splash port or brandy over and leave to steep. Whip the cream to a light softness, not stiff. Grate the peel of the oranges and the lemon and add to the cream. Squeeze the oranges and the lemon and add to the mashed Christmas pudding. Cover the bottom of a serving dish with the mashed Christmas pudding. Cover with the whipped cream. Sprinkle the pistachios over the top.
