As temperatures drop and the evenings grow darker, we need to brighten the winter gloom with some tropical spiced rum cocktail recipes—RedLeg’s spicy Caribbean rum blend will do just the trick.
RedLeg Ginger Mojito
Serves 1
Ingredients
50ml RedLeg Rum
10ml sugar syrup
Half a lime (3 wedges)
10 mint leaves
Ginger beer
Muddle the lime to release the juices. Add the RedLeg and the sugar syrup. Clap the mint into your hands and add to the glass, fill with cubed ice and top up with ginger beer. Use a bar spoon to mix up all the ingredients and serve.

Hot Rum Slap
Serves 8
Ingredients
1l cloudy apple juice
1l ginger beer
4 large cinnamon sticks
200ml RedLeg Rum
1 lime
Add the apple juice, ginger beer and cinnamon into a saucepan (no rum). Warm up on a low heat for around 45 minutes until the cinnamon has infused. Pour 250ml of liquid into a heatproof glass and add 25ml of RedLeg into the glass. Squeeze a wedge of lime into the glass and throw away the lime. Give it a stir and serve.

Stocking Filler
Serves 1
Ingredients
200ml clementine juice (or orange)
50ml RedLeg Rum
Juice of half a lime
3 star anise
5 cloves
Slowly heat all the ingredients, except the rum, in a pan for 10 minutes. Strain out the cloves and star anise and pour into a heatproof glass. Add the rum and stir. Serve immediately.
