Stichelton is a new cheese that came into production several years ago. It is the brainchild of cheesemaker Joe Schneider and chairman of Neal’s Yard Dairy, Randolph Hodgson, who wanted to create a classic blue cheese similar to Stilton that didn’t use pasteurised milk or factory-produced rennet. Made by hand at their farm on the Welbeck Estate in Nottinghamshire, Stichelton has a full, creamy, sumptuous flavour reminiscent of traditional raw-milk Stilton, which was last produced in the 1980s.
